n incredible green thumb. While everyone else was enduring the tomato embargo this summer, we had lots & lots & lots - and they're SAFE!! We've also had green peppers, zucchini, a couple of eggplants, more okra than my precious parents can eat, gourds, & spaghetti squash. Plus, we have two amazing herb gardens that have produced a ton of basil, garlic, oregano, dill, sage, and onions. I've never been much of a
veggie person, but I have really enjoyed fixing new things this summer. My fave has been Carolina Caviar. ENJOY!!
Carolina Caviar2 (15.8 oz.) cans black-eyed peas, rinsed and drained
1 (16 oz.) bottle Italian dressing
1 (11 oz.) can white
shoepeg corn, drained
1 large firm tomato, chopped
1 green bell pepper, chopped
1 small onion, chopped
1 cup chopped fresh parsley
4 green onions, chopped
1 T. chopped fresh cilantro
2 garlic cloves, minced
Stir together all ingredients in a large bowl. Cover & chill 8-24 hours. Spoon mixture into a serving bowl, using a slotted spoon. Serve with Scoops. Yield: 8 cups.
